Recipe time ~ Easy Potato Pancakes

These are a FAVORITE in our family.....they make a great side to any beef entree. So simple to make and great tasting too! Here's the recipe:

6 peeled potatoes
1 small onion, diced small
1 large egg
1/4 cup AP flour
salt and pepper to taste

1/4 cup butter or margarine
1/4 cup vegetable oil

Shred peeled potatoes and dice one small onion. Combine next 4 ingredients until well incorporated. Heat butter and oil in iron skillet until melted, add a heap of potato mixture in pan and fry on each side for about 3-4 minutes. Let drain on paper towels until ready to serve. YUMMO! :)

Do you have any side dishes that are easy to make and ones that your family loves? Email them to me at torritom@graceba.net and I'll post them on the Blog! Also, let me know if you try the above recipe and what the results were!

  2. I'll try this for sure! Do you serve it with syrup or ketchup? Or maybe both go well with it?
