Recipe time ~ Easy Potato Pancakes

These are a FAVORITE in our family.....they make a great side to any beef entree. So simple to make and great tasting too! Here's the recipe:

6 peeled potatoes
1 small onion, diced small
1 large egg
1/4 cup AP flour
salt and pepper to taste

1/4 cup butter or margarine
1/4 cup vegetable oil

Shred peeled potatoes and dice one small onion. Combine next 4 ingredients until well incorporated. Heat butter and oil in iron skillet until melted, add a heap of potato mixture in pan and fry on each side for about 3-4 minutes. Let drain on paper towels until ready to serve. YUMMO! :)

As I was pouncing the other day, on ETSY's just sold items, I came across this awesome store: JJ's Jazzy Jewels . The earrings are just GORGEOUS and when I clicked on her store, I couldn't believe how resonably priced they were! I think a majority of them are from $7.00 to $12.00. I really love to accessorize! I LOVE vintage jewels, those that remind me of what my grandmothers used to wear, and I love to sparkle! Bling it on! I was completely drawn to the blingability of her earrings and I love the colors she uses. So many to choose from! Maybe she could make me a pair of pink earrings? Pink is my favorite! I love Pink! Pretty in Pink, Pink as a Pigs nose....Did you ask if I LUUUVVVEEDDD pink? Well, yes I do!

New Potato Salad from Kraft Kitchens

YUMMO! :) I love potato salads during our "Heat Advisory" summers! So light and delicious. When Kraft sent this email to me the other day, this was one of the items that really caught my eye! We love New Potatoes, so this is a perfect fit for us.

If you would like the recipe, here's a LINK to it. Do you have any easy summer recipes that will help keep us out of the kitchen? Don't know about you, but my kitchen is usually about 10 degrees hotter than the rest of the house, so anything to keep the stove off would be a blessing!
