Banana Crumb Muffins, Oh my!
As I was perusing allrecipes.com the other day, this recipe kinda jumped out at me and said "Make Me". So I did! :)
Not only do these muffins smell amazing while they're baking, they are completely awesome to eat as well. Oh yeah!
The crumb topping is really what makes this recipe. For some reason the crumb mixture sank into the middle of the muffin. But boy let me tell ya, that was probably the BEST part! Ms. M loved them so much that she's begged me to make another batch. Just our luck that bananas are on sale this week! RECIPE: Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter
Directions
1.Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
2.In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
3.In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
4.Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
These are so moist and go great with your favorite cup o' joe or hot tea. Perfect for the cooler temps! It's supposed to be in the 40's for lows this weekend, so might need to whip up a batch of these! :) ENJOY!

Bleck.......
Do you ever have those days (or weeks) when you get in a food rut?
Sure, I look at allrecipes.com, ThePioneerWoman.com and other foodie sites.
Love what they have on there, but do I feel like cooking it? No.
(Although this does look AH-MAZING!)

No, they aren't going hungry, and they say my meals are great.
Is it just me?
I sometimes get in these "don't wanna's", but this one is lasting for a while.
I guess I should just enjoy not wanting to eat.
I am excercising, and have been told I look thinner.
Don't think these things will help loose weight, but they do look Scrumpdeliscious!
