Recipe time ~ Easy Potato Pancakes


These are a FAVORITE in our family.....they make a great side to any beef entree. So simple to make and great tasting too! Here's the recipe:


6 peeled potatoes
1 small onion, diced small
1 large egg
1/4 cup AP flour
salt and pepper to taste

1/4 cup butter or margarine
1/4 cup vegetable oil

Shred peeled potatoes and dice one small onion. Combine next 4 ingredients until well incorporated. Heat butter and oil in iron skillet until melted, add a heap of potato mixture in pan and fry on each side for about 3-4 minutes. Let drain on paper towels until ready to serve. YUMMO! :)
